APPLE FENNEL SLAW with Blueberry Walnut Dressing

  • 1 cup fennel very thinly sliced
  • 2 large apples
  • A handful of fresh blueberries
  • A few toasted walnuts (optional)
  • Dressing:

  • 3 Tbsp walnut oil
  • 3 Tbsp ‘BLUE STOCKING’ blueberry vinegar
  • 1/2 tsp honey
  • Whisk oil and vinegar together with honey and pour over apple and fennel slaw.

    Simple. Refreshing. Delicious! Serves 4

    To toast walnuts heat gently in a skillet and toss gently so they don’t burn. When they are fragrant they are done.
