- 2 lb pork loin roast
- 2 Tbsp. BAM! Blackberry Vinegar
- 2 Tbsp. honey
- 2 Tbsp. grain mustard
- 1/3 cup olive oil
- 1 Tbsp. finely chopped thyme
- 1 small onion sliced
Season pork loin roast with salt and pepper.
Mix together the remaining ingredients and put into a plastic zip loc bag.
Add pork loin, turn to coat.
Roast in a preheated oven at 350F about one hour or until internal temperature reaches 160F.
Let rest on a cutting board about 15 minutes to allow juices to settle.
Slice and serve.
*** for slightly pinker pork roast cook until internal temperature reaches 145F and rest 20 minuntes before slicing.
